Love salmon? You'll love it even more with this amazing recipe. It has a sweet and spicy sauce that also is drizzled on the broccoli. Serve it with a side of your favorite rice and a salad, if desired.
3 - 6 oz. salmon fillets
2 small bunches broccoli or about 4 c. florets with stems
6 T. light flavored olive oil
3 T. soy sauce
3 T. rice vinegar
3 garlic cloves, minced
1 scant t. red pepper flakes
3 T. peach jam
Heat broiler with rack in middle position. Line a baking sheet with aluminum foil; grease lightly with oil.
In a small bowl, combine olive oil, soy sauce, vinegar, garlic, red pepper flakes and jam; set aside.
Place the salmon on prepared baking sheet; spoon half of the sauce mixture on top of the salmon. Broil just until it barely flakes apart with a fork, about 10 minutes.
While salmon is cooking, steam the broccoli in the microwave or on the stove-top; remove when still crisp tender, after about 4 minutes.
Drizzle remaining sauce over the broccoli, tossing gently to coat well.
