This super easy and quick to make chicken is better than what restaurants serve. It is very tasty and deliciously seasoned. Serve with your favorite sides.
4 boneless, skinless chicken breasts
freshly squeezed juice from 2 lemons, about 1/2 c.
2 T. extra virgin olive oil
2 t. lemon pepper
1 t. dried basil
1 t. dried oregano
¼ t. salt
freshly chopped parsley and lemon slices, for garnish
Place chicken breasts in a gallon-size zip lock plastic bag; pour in lemon juice, olive oil, lemon pepper, basil, oregano and salt; shake to get all chicken covered. Let marinate in refrigerator for 30 minutes or up to 8 hours.
When ready to cook, heat a heavy skillet over medium-high heat. Remove chicken from the marinade; place into hot skillet. Discard marinade.
Cook chicken 6 - 7 minutes per side, flipping halfway through; cook until chicken reaches an internal temperature of 165 degrees F.
Serve hot, garnished with freshly chopped parsley and lemon slices, if desired.
