Description
This recipe definitely rivals the one at Noodles and Company and it is much cheaper too. This dish can be ready to eat in just a little more than 15 minutes. You can't beat that!
Ingredients
- 1 lb. penne pasta
- 1 T. olive oil
- 8 oz. sliced mushrooms
- 2 cloves garlic, crushed
- 1½ c. good quality marinara sauce, like Rao's
- ¼ - ½ t. crushed red pepper flakes
- 4 Roma tomatoes, diced
- 3 c. fresh spinach leaves
- ½ c. heavy cream
- salt and pepper, to taste
- ½ c. shredded Parmesan cheese
Steps
- Cook pasta in well salted water according to package directions.
- Meanwhile, heat olive oil in a large skillet over medium-high heat; add sliced mushrooms; saute 3 minutes or until mushrooms are tender. Add crushed garlic; cook 1 minute. Stir in cooked pasta, marinara sauce and crushed red pepper flakes. Pour in tomatoes and spinach; stir to combine; stir in heavy cream.
- Serve hot sprinkled with Parmesan cheese.
