Penne Rosa

Description

This recipe definitely rivals the one at Noodles and Company and it is much cheaper too. This dish can be ready to eat in just a little more than 15 minutes. You can't beat that!

Ingredients

1 lb. penne pasta
1 T. olive oil
8 oz. sliced mushrooms
2 cloves garlic, crushed
1½ c. good quality marinara sauce, like Rao's
¼ - ½ t. crushed red pepper flakes
4 Roma tomatoes, diced
3 c. fresh spinach leaves
½ c. heavy cream
salt and pepper, to taste
½ c. shredded Parmesan cheese

Cook pasta in well salted water according to package directions.

Meanwhile, heat olive oil in a large skillet over medium-high heat; add sliced mushrooms; saute 3 minutes or until mushrooms are tender. Add crushed garlic; cook 1 minute. Stir in cooked pasta, marinara sauce and crushed red pepper flakes. Pour in tomatoes and spinach; stir to combine; stir in heavy cream.

Serve hot sprinkled with Parmesan cheese.

4-6 servings.
