This fabulous casserole just shouts "eat me"! It's a fast, comforting dish that is moist, smoky and just simply delicious and quick and easy to make.
1 lb. spaghetti, cooked until al dente
1 lb. BBQ pulled pork
2/3 c. sweet and thick Kansas City-style BBQ sauce or favorite
8 oz. can tomato sauce
1 T. tomato paste
1/4 c. sour cream
3 green onions, chopped
1 1/2 c. shredded Cheddar cheese
cilantro, for garnish, if desired
additional BBQ sauce, for serving
Cook spaghetti in well salted boiling water until al dente, about 10 minutes; drain; set aside.
Preheat oven to 350 degrees. Lightly grease a 9 X 13 inch baking dish.
In a large bowl, combine BBQ and tomato sauces, tomato paste and sour cream; stir well. Add pasta, BBQ pork and green onions to bowl; toss. Pour mixture into prepared baking dish. Top with cheese; cover with aluminum foil that has been sprayed with cooking spray, so it won't stick to the cheese. Bake for 20-30 minutes or until hot all the way through.
Serve, topped with cilantro and drizzled with a bit of additional BBQ sauce on top.
8 servings.
*You can use 1 lb. pulled chicken if desired. If the BBQ meat already has a lot of sauce, cut back a bit on the BBQ sauce added.
