This easy, quick, delicious weeknight meal will make everyone happy. You will definitely add this to your meal rotation. Feel free to add some garlic and/or red pepper flakes, if desired.
6 oz. bacon
1 small onion
2 c. chicken broth/stock
1/2 lb. pasta, uncooked
3-4 c. fresh spinach
1/3 c. grated Parmesan cheese
Cut bacon across the strips into 1" pieces; sauté in a large skillet until brown and crispy. Using a slotted spoon, remove the bacon to a bowl. Carefully pour the somewhat cooled bacon fat off into a separate bowl, leaving about 1 T. in the skillet.
While bacon is still cooking, dice the onion. Once bacon is removed and the fat is removed from the skillet, add diced onions; sauté until soft and transparent; allow moisture from the onions to dissolve some of the browned bits off of the bottom of the skillet. Add chicken broth/stock to the skillet; dissolve any remaining browned bits of bacon drippings from the bottom of the skillet.
Add uncooked pasta to the skillet; cover; let come to a boil over high heat. When it reaches a boil, give it a quick stir; turn the heat to low; let simmer 10 minutes with the lid in place. Stir to loosen the pasta from the bottom every few minutes, replacing the lid quickly each time. After 10 minutes the pasta should be tender and most of the broth/stock absorbed, with a little bit of thick, saucy broth remaining in the bottom of the skillet.
Add spinach to the skillet; stir until wilted into the pasta. Turn off heat; add bacon back to the skillet; sprinkle the Parmesan on top; stir to combine.
Serve immediately.
