1/2 onion, diced
1 lb. ground beef
14.5 oz. can Italian diced tomatoes
1 1/2 c. frozen mixed veggies, peas and carrots
3/4 c. uncooked white rice
2 c. beef stock/broth
1 t. dried oregano
1 t. garlic salt
1/2 t. dried basil
1/2 t. pepper
1 1/2 c. shredded mozzarella cheese
fresh parsley, if desired
Brown ground beef and onion in a large skillet until no longer pink; discard excess fat. Add tomatoes, veggies, rice, stock/broth, oregano, garlic salt, basil and pepper; stir; bring to a light boil; reduce heat to a simmer; cover; cook until rice is tender, about 17 minutes.
Fluff rice with fork; top with mozzarella cheese. Cover for about 3 minutes to allow cheese to melt.
Garnish with parsley, if desired. Serve.
4-6 servings.
*Substitute 1 cup of small pasta, like shells, macaroni, etc. for the rice, if desired.
