Do you need a simple to make but fantastically delicious main dish for dinner on a busy week night? Go no further, this one is it. Serve it with your favorite side dishes and a salad, if desired.
1 c. bottled Italian dressing
4 skinless, boneless chicken breast halves
1 T. olive oil
15 oz. can artichoke hearts, drained and chopped
3/4 c. grated Parmesan cheese
3/4 c. mayonnaise
1/4 t. garlic powder
Marinate chicken breasts in Italian dressing for a few hours to overnight.
Preheat oven to 375 degrees.
Heat olive oil in a non-stick skillet over medium-high heat. Remove chicken from marinade; discard marinade. Cook chicken 2 minutes per side; place chicken on a foil-lined baking sheet.
In a medium bowl, mix together the chopped artichoke hearts, cheese, mayonnaise and garlic powder; spread mixture evenly on the top of the chicken breasts.
Bake 20 - 25 minutes or until juices run clear.
