Is 20 minutes too much time to prepare a fantastic, satisfying dinner? That's all the time that you need to make this one pot skillet dish that the whole family will enjoy. Serve it with a side salad and some crusty bread, if desired.
1 lb. hot or mild Italian sausage
1/2 medium onion, chopped small, about 2/3 c.
3 cloves garlic
3 - 14 oz. cans crushed tomatoes
20 oz. refrigerated tortellini*
4 oz. baby spinach, roughly chopped
1/2 c. heavy cream
1/2 c. Parmesan or Pecorino Romano cheese, shredded, optional
Cook and crumble the sausage in a large skillet over medium-high heat. When sausage is almost browned, add onion and garlic; cook for 2-3 minutes until garlic is fragrant and onion begins to soften. Add tomatoes and tortellini; stir; reduce heat when sauce comes to a simmer; cover; simmer until tortellini is tender, about 8-10 minutes.
Add spinach; stir for 1-2 minutes until spinach wilts; stir in cream.
Sprinkle each serving with cheese, if desired.

* Variations: Try three cheese, spinach or mushroom filled varieties of tortellini if desired.
