Make your guacamole even better by adding bacon and roasted garlic. It puts it so over the top, you won't make guacamole any other way again.
1 garlic head
1 t. olive oil
salt and pepper, to taste
2 strips center cut bacon, uncooked
3 avocados, pitted
1/4 c. minced red onion
1/4 c. chopped fresh cilantro
freshly squeezed juice from 1 lime
1/4 t. smoked paprika or cayenne pepper
Preheat oven to 400 degrees.
Slice the top off of the garlic head, exposing the cloves; brush with olive oil; sprinkle with salt and pepper; loosely wrap in aluminum foil. Bake 45 minutes.
Place bacon on a rack with a drip pan underneath the pan; during the garlic's last 10-12 minutes, bake the bacon for 10 -12 minutes in same oven until bacon starts to get crisp. Remove bacon; blot with towels; chop.
When garlic is done, cool 5 minutes; squeeze out into a bowl. Add avocados, onion, cilantro, lime juice and smoked paprika; mash to the preferred consistency. Gently mix in bacon; add salt, to taste.
