Everyone loves a good slow cooker recipe. This one will be gobbled up quickly, so don't count on leftovers. It is full of cheesy potatoes and your favorite smoked sausage, so it's comforting and satisfying.
32 oz. frozen diced potatoes
2 c. sour cream
10 oz. condensed cream of chicken soup
2 c. grated Cheddar cheese
1 t. onion powder
1 t. garlic powder
1 t. salt
1 t. pepper
1 t. olive oil
1 lb. smoked sausage, sliced into thin rounds (beef, pork or turkey)
1 T. parsley, chopped
Place a slow cooker liner in the base of the slow cooker for easy cleaning. Add all ingredients except for the olive oil, sausage and parsley; carefully stir; set to Low. Cook 4 hours or until potatoes are tender.
When potatoes are done, heat a large skillet over high heat; add olive oil.
Add the smoked sausage to the hot skillet; sear on both sides. Stir sausage into the potatoes.
Garnish with parsley just before serving.
