Grill some healthy burgers from a combination of white and dark ground chicken, green chilis, and seasonings and then top them with cheese, tomato, lettuce and tasty chipotle mayo. Yummy!
Chicken Patties:
1 1⁄2 lb. ground chicken blend of white and dark meats
4 oz. can chopped green chilis
3 T. chopped fresh cilantro
2 minced garlic cloves
1⁄2 c. panko
2 T. freshly squeezed lime juice
1 t. lime zest
1 t. ground cumin
1 t. kosher salt
3⁄4 t. pepper
Chipotle Mayo (1 1/4 c.)
1 c. mayonnaise
2 T. finely chopped chives
2 T. chipotle chili in adobo
2 t. freshly squeezed lime juice
salt and pepper, to taste
4 slices Sargento 4-Cheese Southwest Blend Slices
4 hamburger buns (toasted or grilled on one side, if desired)
sliced tomatoes
fresh lettuce
Mix together all chicken patty ingredients; shape into 4 equal sized patties; refrigerate until firm, about 30 minutes.
Preheat grill to 350 - 400 degrees (medium-high). Cook burgers 4-5 minutes; flip; cook until desired doneness is reached (165 degrees measured on a thermometer to be safe).
Add cheese slice to burger patty; allow it to melt. Depending on how hot the grill is, you might need to lower the lid to make this happen quickly. Remove burgers from grill to rest.
