Put you slow cooker to good use with this ham and bean soup. There is no need to soak the beans overnight since it cooks slowly all day. It is quick and easy to put together and will be one of your favorite meals when the weather turns chilly.
1 bag Hurst’s HamBeens 15 Beans Soup
8 c. low-sodium chicken broth/stock, (or water, beef, or vegetable broth/stock for added flavor)
1 leftover ham bone with meat (or ham hocks, diced ham or 1 lb. cooked sausage)
1 onion, diced
1 clove garlic, minced
1 t. chili powder optional
15 oz. can diced tomatoes
freshly squeezed juice from 1 lemon
hot sauce or crushed red pepper, to taste (optional)
Rinse beans; drain; sort any unwanted debris; set seasoning packet aside.
Place a slow cooker liner in the base of a slow cooker for easy clean up. Put beans, onions, ham bone, broth/stock, garlic and chili powder in a 6 qt. slow cooker.
Cook on High 5 hours or Low for 7-8 hours or until beans are tender.
Once tender, remove the ham bone, if used; chop meat left on the bone; add meat back to the slow cooker. Stir in diced tomatoes, ham flavor packet and lemon juice. Cook for additional 30 minutes.
Serve.
