Sandwiches can be so boring, but they don't have to be. You can't go wrong with roast beef, 2 different cheeses, mushrooms, onions and a little garlic all warmed on a loaf of French bread.
Garlic Bread:
14-16 oz. loaf French Bread
4 T. butter, softened
1-2 cloves garlic, minced
1/4 c. finely grated Parmesan cheese
2 T. minced parsley
Sandwiches:
2 T. butter
8 oz. fresh mushrooms, sliced
2/3 c. sliced onions
1 clove minced garlic
1 T. Worcestershire sauce
1 lb. deli-shaved roast beef
1/2 lb. sliced Colby Jack cheese
Preheat the oven to 400 degrees.
Cut French bread in half lengthwise.
In a small bowl, combine butter, garlic, Parmesan cheese and parsley; mix well. Spread half of the butter mixture on each half of the cut side of the bread. Put the buttered sides together; wrap in foil. Bake for 15 minutes.
While bread is baking, melt the butter in a large skillet over medium-high heat. Add mushrooms and onions; cook until softened, 10-15 minutes. Add garlic; cook until fragrant, about 1 minute; add Worcestershire sauce. Turn off/remove from heat.
When the bread is warmed through, remove; place on a large baking sheet, buttered sides facing up. Put half of the roast beef on each side, then half of the mushroom mixture on each side; top with the cheese.
Return to the oven. Bake until cheese is melted and bubbly, 3-5 minutes.
Cut each half into 3 pieces. Serve hot.
