This fabulous pork dish is tender and full of mouth watering goodness. It's made with just a few simple ingredients in the slow cooker. Serve with your favorite side dishes.
3 lb. pork loin, trimmed of excess fat
1 T. canola oil
kosher salt and freshly ground black pepper, to taste
4 garlic cloves, minced
1/3 c. light brown sugar
8 slices thick cut bacon
Rub canola on the pork; add salt and black pepper, to taste; add the garlic and brown sugar to the top of the pork. Wrap the pork loin with the bacon, all the way around.
Place carefully into the slow cooker; cook on Low for 4-5 hours.
Let pork rest 5-10 minutes before slicing.
Serve.
8 servings.
*Some slow cookers will need to be set on High for a 4 hour time period.
**If after 4 hours for some reason the bacon is not as crispy as desired, remove the pork and put it on a baking sheet in the oven on broil for 2-3 minutes, keeping the pork in the middle of the oven, not too close to the top.
