Cooler weather isn't far away and warm, comfort food will be a hit with the family. This dish takes just a little over 30 minutes to prepare and is made with just a few ingredients. It can be adjusted to your own taste if you wish, using green peppers, ja
2 lb. lean ground beef
1 onion, finely chopped
4 cloves garlic, minced
2 - 15 oz. cans kidney beans, drained
2 - 14.5 oz. cans stewed or canned tomatoes, undrained and broken up with hands
3 T. chili seasoning mix, or to taste
salt and freshly ground black pepper, to taste
Cook ground beef, onion and garlic in a large pot over medium heat until crumbly and browned, 5 - 10 minutes; drain/discard fat.
Add kidney beans, tomatoes and chili seasoning to the pot; stir; cook over medium-high heat.
Bring to a boil; reduce heat to low; simmer, stirring occasionally, until vegetables are slightly tender and chili is heated through, about 15 - 20 minutes.
Season with salt and ground black pepper, to taste.
Serve with a dollop of sour cream and shredded cheese, if desired.
