Weeknights call for simple and quick dinners. Simple and quick to prepare and to clean up. This one has both and on top of that, it's very tasty and is made with inexpensive ingredients that are panty staples. Serve with a side salad, if desired.
1 lb. lean, ground beef or turkey
2 T. dried, minced onion
1 t. minced garlic from about 2 cloves
10 oz. medium sized pasta, not cooked (like Campanelle, penne, rotini, farafelle or rigatoni)
15 oz. can tomato sauce
14.5 oz. can diced tomatoes
2 t. Italian herbs
1 t. garlic salt
1/2 t. onion powder
2 c. water
1 c. Mozzarella cheese, shredded
1/2 c. Parmesan cheese, shredded
fresh Italian parsley, for garnish, if desired
Heat a large skillet over medium-high heat; cook ground beef. While meat is cooking, add in onion and garlic; brown completely; drain/discard any excess fat.
Continue to heat over medium-high heat; add in diced tomatoes, tomato sauce, pasta, Italian herbs, garlic salt and onion powder; stir to combine; add water. Bring to a simmer; reduce heat to medium-low; cover; cook on medium-low heat for 12-15 minutes or until pasta is cooked to al dente.
When pasta is cooked, add in cheeses; stir so that the cheese melts into the goulash. Let cool for 5 minutes.
Serve with shredded Parmesan cheese and garnished with Italian parsley, if desired.
