Serve this delicious pasta as a main dish or as a side dish. It's quick to make and oh so good. Serve it with a salad and your favorite vegetable.
16 oz. short pasta
4 large garlic cloves, minced
8 c. baby spinach
1 c. fresh basil leaves
1/2 c. heavy cream
2/3 c. freshly grated Parmesan cheese
kosher salt, to taste
freshly ground black pepper, to taste
1 c. reserved pasta cooking water
Bring a large pot of well salted water to a boil; add the pasta and the minced garlic; cook until the pasta is just tender; scoop out 1 cup of the pasta water just before draining; set reserved water aside; drain.
Pour the cream into the bottom of the same pot; warm it over medium heat; once warm, add the pasta and about 1/4-1/2 cup of the reserved water back into the pot; toss gently to coat the pasta. Add the basil and spinach leaves; toss to wilt. Season generously with salt and pepper; cook over medium-low heat for several minutes, tossing constantly. Stir in Parmesan cheese and reserved water, as needed in order to achieve a creamy sauce that coats the pasta.
