Now you can have that grilled cheese sandwich anytime of the day. Try it for breakfast, brunch, lunch or even dinner.
4 large eggs
4 slices of thick Texas style bread
4 slices cheese, like Colby Jack and Pepper Jack or other favorite cheeses
butter
salt, to taste
freshly ground black pepper, to taste
Butter one side of each slice of bread; set aside.
In a skillet, melt a some butter over low heat. Fry both eggs until the yokes are cooked to desired doneness. Season with salt and pepper, to taste. When done, remove from heat; set aside.
In a separate skillet, add a slice of bread, buttered side down. Add a slice of Colby Jack cheese; top with 2 fried eggs. Add a slice of Pepper Jack cheese on top of the eggs. Top with another piece of bread, buttered side up. Cover skillet with a lid; cook until cheese is melted and bread is golden brown on both sides.
Repeat with remaining ingredients.
2 sandwiches.
*Variations: Try adding cooked bacon or ham, different cheeses or tomato slices.
