One Pan Healthy Sausage and Veggie Dinner

Description

One pan dinners are always a hit and this one will be too. It's quick to prepare and clean up is a snap. Make it even healthier with turkey or chicken smoked sausage.

Ingredients

2 c. red potato, small cubes
12 oz. green beans
1 large head broccoli
1 1/2 c. chopped bell peppers from 2 large or 6-7 mini sweet bell peppers
9 oz. smoked sausage, your favorite (not ground sausage)
3-6 T. olive oil
1/4 t. red pepper flakes, optional
1 t. paprika
1/2 t. garlic powder
1 T. dried oregano
1 T. dried parsley
1/8 t. salt, optional
1/4 t. pepper

Optional: freshly grated Parmesan cheese, fresh parsley, quinoa or rice

Preheat oven to 400 degrees. Line a large sheet pan with foil or parchment paper.

Chop potatoes into fairly small pieces so they'll be tender; trim end off of the green beans, then cut into halves; chop broccoli; chop peppers into thick squares; coin the sausage in thick slices.

Place all veggies and sausage on the prepared sheet pan; pour on the olive oil and all of the spices over the top; toss to evenly coat all ingredients.

Bake 15 minutes; remove from the oven; flip/stir all everything around. Return pan to the oven; bake for 10-15 minutes or until veggies are crisp tender and sausage is browned.

If desired, sprinkle on freshly grated Parmesan cheese over everything as soon as it comes out of the oven.

Serve with rice or quinoa and fresh parsley, if desired.

Makes 4 servings if served with rice or quinoa.
