With just a little bit of time and effort, you can have the perfect, very economical meal for those busy weeknights. It's packed full of flavor with yummy sausage, potatoes, cabbage and is seasoned perfectly. Serve with a crusty bread or garlic toast.
1 lb. Italian or hot sausage or other favorite sausage
3 garlic cloves, minced
1 medium onion, diced in 1/2 in. pieces
4 c. potatoes, peeled and chopped bite-size, from about 2 huge russet potatoes
8 c. chicken stock, or water plus 2 T. chicken base
1 1/2 t. kosher salt
1/2 t. freshly ground black pepper
1/2 head of cabbage, thinly sliced into strips
2 t. fresh thyme or 3/4 t. dried thyme
In a large pot, cook and crumble sausage over medium-high heat. Add garlic and onions; saute until softened. Add potatoes, chicken stock, salt and pepper; bring to a low boil for 10-15 minutes. When potatoes are almost tender; add cabbage and thyme; stir to wilt the cabbage, allowing it soften for 1-2 minutes.
