Preheat oven to 350 degrees.

Mix meatball ingredients together gently but thoroughly incorporated, DO NOT over mix.

Use a tablespoon or small scoop to portion out the meatballs; roll meatballs in the palms of your hands until they are smooth and round; place on an un-greased cookie/baking sheet. Bake for 10 minutes.

Sauce:
Add all sauce ingredients to a large saucepan; heat, stirring to combine, until it comes to a boil; lower heat; let it boil gently for about 5 minutes. Taste to adjust ingredients or seasonings.

While sauce is cooking, heat 1-2 T. olive oil in a large skillet. Remove meatballs from the oven; brown them, in batches, in the skillet, cooking them and turning often, for about 5-7 minutes, or until done inside. The internal temperature should reach 155 degrees. The meatballs will cook further in the sauce.

Combine meatballs and sauce together; bring up to a gentle simmer; cover; let simmer for a few minutes to heat everything through.

Serve hot with toothpicks or cocktail forks. You could transfer everything into a slow cooker set on warm and serve from it.

4 dozen meatballs- serving size = 2 meatballs

*These meatballs are NOT suitable for children since not all of the alcohol will cook off!
