Greek Pizzas with Feta, Spinach and Kalamata Olives

Pizza doesn't always have to be Italian inspired. Try this one with no red sauce or tomatoes. It's made with olive oil, spinach, jarred red peppers, red onion, Kalamata olives and feta cheese on a homemade pizza crust.

Ingredients

1 recipe pizza dough (see below)
2 T. extra virgin olive oil
1 red onion, sliced thin
4 oz. fresh spinach, roughly chopped
2 jarred roasted red pepper halves, roughly chopped
¾ c. Kalamata olives, halved
6 oz. feta cheese, crumbled

Basic Pizza Crust:
1 t. instant or active dry yeast
1-½ c. warm water, not lukewarm
4 c. all-purpose flour
1 t. Kosher salt
⅓ c. olive oil

Preheat oven to 450 degrees. If using a pizza stone, place stone in the oven while heating up.

Stretch the pizza dough into 2 rounds; drizzle with olive oil.

Top each pizza with red onion, spinach, red pepper, olives and feta cheese. Bake until feta and crust turn golden brown, about 10-12 minutes. Remove the pizzas from oven.

Serve.

Basic Pizza Crust: (makes 2 crusts)
Sprinkle yeast over 1 1/2 c. warm water; let stand for a few minutes.

In a mixer, combine flour and salt; with the mixer running on low speed, with paddle attachment, drizzle in olive oil until combined with flour. Pour in yeast/water mixture; mix until just combined and dough comes together in a sticky mass.

Coat a separate mixing bowl with a light drizzle of olive oil; form dough into a ball; toss to coat dough in olive oil; cover bowl tightly with plastic wrap; set aside for 1 - 2 hours, or store in refrigerator until needed.

*It’s best to make the dough at least 24 hours in advance- 3 or 4 days is even better.

When ready to make the pizza, grab HALF of the pizza dough (recipe makes 2 crusts) and squeeze the dough toward the bottom to form a nice, tight, pulled ball. Roll out the pizza with a rolling pin if desired, or throw it around and pull and stretch until it feels right. When crust is nice and thin, lay it on an oiled baking sheet or pizza pan/stone. Drizzle a little olive oil on the dough; spread it with your fingers. Lightly sprinkle a bit of salt on the crust.

Preheat oven to 375 degrees. Top crust with toppings of choice. Bake 15 - 17 minutes or until crust is golden brown and toppings are bubbly.
