This quick and easy to make soup is a great soup to serve on those cold and blustery days when a warm, comforting and satisfying meal is needed. Serve it with a crusty, warm bread and a side salad.
1 lb. bulk Italian sausage
1/2 c. chopped onion
2 cloves garlic, finely chopped (or 2 t.)
32 oz. carton chicken stock/broth
1/2 t. salt
1/4 t. pepper
16 oz. package potato gnocchi (found in pasta aisle)
3 c. packed fresh spinach (about 4 oz.), coarsely chopped
1 c. heavy whipping cream
In a 5 quart pot or Dutch oven, cook sausage over medium heat 7 - 10 minutes or until sausage is no longer pink; drain/discard grease. Add onion and garlic; cook 2 - 3 minutes or until onions are tender. Add chicken stock/broth, salt and pepper; heat to boiling; stir in gnocchi and spinach; simmer 2 - 3 minutes or until gnocchi begins to float. Stir in whipping cream.
Serve.
6 servings.
Tip: For a little spicy heat, add 1/4 t. crushed red pepper flakes.
