This recipe will become you go to recipe when you want a comforting, satisfying and delicious whole meal without a lot of fuss or preparation. Make it in the slow cooker and go about your day, or make it in the oven.
non-stick cooking spray
32 oz. bag frozen tater tots
1 lb. lean ground beef
1 small onion, diced
2 c. mixed vegetables, fresh or frozen (or left overs)
10.5 oz. can cream of mushroom soup
1 c. milk
1/4 t. garlic powder
1 t. dry mustard
salt and pepper, to taste
2 c. shredded cheddar cheese
Brown ground beef and onion in a skillet over medium heat until no pink remains; discard fat.
In a bowl, mix together soup, milk, garlic powder, dry mustard, salt and pepper; set aside.
Line the crock of a 4 qt. slow cooker with a slow cooker liner for easy clean up. Spray the inside of the liner with a non-stick cooking spray.
Place half of the tater tots into the slow cooker. Layer beef, mixed vegetables, remaining tater tots and finally the cheese. Pour sauce over the top; cover; cook on High 3-4 hours or on Low 7 hours or until heated through.

*Oven Method: In a 9×13 inch pan, layer beef, veggies and finally tater tots; top with sauce and cheese. Bake at 400 degrees for about 30 minutes or until golden and bubbly.
