Classic Tuna Melt

Description
Enjoy the best tuna melt sandwich that you will ever have in the comfort of your own home. It can be ready in just a few minutes so you won't have to wait long. Serve with chips and a dill pickle spear, if desired.
Ingredients
2 cans tuna, drained
medium size onion, chopped
1/2 celery stalk, chopped
1 clove garlic, minced
1 T. fresh parsley, chopped
3-4 T. mayonnaise
3 T. olive oil, divided
1/3 c. Mozzarella cheese, shredded
salt, to taste
freshly ground black pepper, to taste
4 bread slices
butter, room temperature

Drain water or oil from tuna; fork tuna into a medium bowl.
Chop onion, celery, and parsley; mince garlic; add ingredients to the tuna.
Add mayonnaise, olive oil and cheese. Combine all ingredients until well incorporated. Salt and pepper, to taste.
Place a non-stick skillet on the stove; add 1 T. olive oil; when skillet is hot, take a slice of bread and generously spread butter on one side; place bread buttered side down in hot skillet. Scoop about 2 T. tuna salad on the bread while it is browning. Butter another slice of bread and place non-buttered side on top of tuna. Use a spatula to check if bread is toasted brown; if it is, flip tuna melt over; grill until golden brown.
Place tuna melt on paper towels; allow to cool a little.
Serve.
