Instead of serving tacos on taco Tuesday, change it up a bit and serve this yummy skillet dish. You'll love it for how fast it is to make and the kids will love it for how good it tastes.
1 lb. lean ground beef
1 taco seasoning packet, your favorite
2/3 c. water
1 head iceberg lettuce, chopped into bite sized pieces
1 red or orange bell pepper, chopped
1 green bell pepper, chopped
1/2 c. sliced black olives, drained
1 can pinto beans, rinsed and drained
1 c. fresh tomatoes, diced
1/4 c. green onions, thinly chopped plus more for optional garnish
1 c. shredded Cheddar cheese
16 oz. Catalina salad dressing (or Thousand Island salad dressing)
sour cream
10 oz. Nacho Doritos, lightly crushed
Brown ground beef until no pink remains; discard excess fat. Stir in taco seasoning packet and water; simmer until thickened, about 5 minutes; set aside to cool.
In a large bowl, combine lettuce, bell peppers, black olives, pinto beans, tomatoes, cheese and green onions. Top with the cooled ground beef. Drizzle with salad dressing; toss to coat evenly.
Garnish with sour cream and more green onions, if desired.
Just before serving, sprinkle Doritos on top. Serve immediately.
