Skip the fast food restaurants and make these delicious chicken nuggets for dinner at home. They have a little heat and spice, but the kids will probably like them too. They'd make a great appetizer for parties too.
2 - 3 boneless, skinless chicken breasts
1 c. plain breadcrumbs (or panko)
1/2 c. Parmesan cheese, freshly grated
1/2 t. salt
3 T. Italian seasoning
1/2 c. Frank's Buffalo Hot Sauce
1/2 c. butter, melted
Bleu Cheese dressing or favorite dipping sauce, optional
Preheat oven to 400 degrees. Lightly grease a large baking sheet.
Trim chicken breast of any fat; cut into 1 inch, nugget sized pieces.
In a small bowl, mix together the breadcrumbs, cheese, salt and Italian seasonings.
In another small bowl, pour in the hot sauce and melted butter; whisk to combine.
Dip chicken pieces into the hot sauce/butter; roll around in the breadcrumb mixture, making sure they are well coated; place chicken nuggets onto prepared baking sheet.
Bake for about 25-30 minutes until nuggets are browned and cooked through.
Serve hot.
6 servings.
*Tip: These nuggets can be frozen unbaked, baked in the oven, adding 5-10 minutes to the baking time for busy weeknight meals.
