This slow cooker meal is easy to make for those busy weeknight meals. It's a great recipe for those on low carb or keto diets but best of all, it's so delicious, you will make it often.
4 large or 6 regular sized boneless, skinless chicken breasts
3 T. butter
1/2 t. poultry seasoning
1/2 t. rosemary
1/4 t. thyme
1 t. minced garlic
3/4 c. chicken stock/broth
3 bacon slices, cooked and crumbled
2/3 c. heavy whipping cream
2 oz. cream cheese
1 c. Cheddar cheese, or more if desired

3/4 t. Xanthan Gum
salt and pepper, to taste
Add chicken, butter, poultry seasoning, rosemary, thyme, minced garlic and chicken stock/broth to slow cooker; add cooked and crumbled bacon on the top of the chicken. Cook on Low for 6 hours or on High for 3 - 3 1/2 hours.
Add heavy whipping cream to slow cooker; dollop cream cheese on top; stir to combine all ingredients. Using 2 forks, shred chicken in the slow cooker.
Sprinkle on Xanthan Gum; allow to simmer with the top off for a few minutes while the mixture thickens. Add 1 c. Cheddar cheese; sprinkle 3 slices of cooked and crumbled bacon on top; cover; allow cheese to melt.
Serve.
