This easy to make soup is perfect to make your family on those busy weeknights. It's comforting and satisfying, is creamy and delicious and full of Italian sausage, noodles and veggies. Serve with a side salad and a crusty bread, if desired for a complete
1 lb. ground Italian sausage, mild or hot
1/2 c. diced onion
1/2 c. diced red pepper
2 t. minced garlic
2 T. butter
2 T. flour
6 c. chicken broth/stock
12 oz. Reames Frozen Egg Noodles
2 c. half-n-half cream
3 c. baby spinach
1/2 t. black pepper
1/2 c. shredded Parmesan cheese
Brown sausage in a large pot; drain and discard excess fat; set aside.
In the same pot, melt the butter; add onions, red peppers and garlic; saute over medium heat for 4-5 minutes. Sprinkle with flour; stir to coat; cook for about 1 minute, stirring constantly. Stir in the chicken broth/stock; bring to a boil.
Once soup is boiling, stir in the Reames Frozen Egg Noodles; return to a boil; cook for 20 minutes, stirring often. Stir in sausage, cream and spinach; cook for several minutes until heated through. Season with black pepper to taste.
Serve with shredded Parmesan cheese.
