Foil-Packet Southwest Chicken Dinner

Description

Clean up is a snap with these chicken dinner foil packets. They don't take long to prepare either which makes them a fantastic meal to make on busy weeknights. But the best thing is that they are delicious.

Ingredients

1 3/4 c. warm water
2 c. instant brown rice, uncooked
4 small boneless, skinless chicken breast (about 1 lb. total)
1/4 cup KRAFT Lite Ranch Dressing
1-1/2 t. chili powder
cumin, to taste
salt and pepper, to taste
1/2 c. KRAFT 2% milk shredded sharp Cheddar cheese
1 red pepper, chopped
4 c. small broccoli florets (or 10 oz. frozen corn, thawed)
more desired seasonings, to taste, optional

Preheat oven to 400 degrees. Cut 4 large pieces of heavy duty aluminum foil; spray with non-stick cooking spray.

Combine water and rice; let stand 5-10 minutes.; evenly divide and spoon the water and the remaining water onto centers the aluminum foil; top with remaining ingredients.

Fold to make 4 packets; place on a rimmed baking sheet.

Bake 30 minutes or until chicken is done. If the chicken breasts are larger than 1/4 lb. each, they'll take longer to cook. Cook chicken breasts long enough so that they're no longer pink in the centers and the juices run clear (165°F).

Cut slits into foil to release steam before opening each packet. Serve.
