Cheeseburger Omelette

Description

You don't just have to enjoy this omelette at breakfast time. It makes a great lunch or dinner as well. It not only is like a cheeseburger but is much like a Big Mac too.

Ingredients

1 T. olive oil
1/4 lb. lean ground beef
3 eggs
1 T. butter
2 slices American cheese, cut into 1/2-inch strips (or Cheddar cheese)
Kosher salt and freshly ground black pepper, to taste
1 T. Thousand Island dressing or ketchup
1 T. dill pickle relish or sliced dill pickles
chopped tomatoes
1 T. green onion, thinly sliced, for garnish (or chopped white onion)

In a medium skillet over medium-high heat, warm the olive oil; add ground beef; cook until browned, about 4 - 5 minutes. Discard excess grease. Season with salt and pepper. Remove from heat; set aside.

In a medium bowl, whisk eggs; set aside.

In a small non-stick omelet pan over medium-high heat, add butter. Once foam has subsided, slowly add egg mixture to the pan; swirl pan gently to spread the eggs evenly in the pan. Once eggs have set, after about 30 seconds, use a spatula to gently lift the edges to allow the remaining egg liquid to flow underneath to cook. Season eggs with salt and pepper. Once the eggs have set but the top is still slightly runny, add the cheese in the middle of the pan; top cheese with the ground beef mixture. Fold one edge of the eggs over, about one third of the way.

Slide the omelet out of the pan, unflipped side first; using a spatula, fold the rest over while plating, so that it sits on the plate with the seam-side down.

In a small bowl, add the Thousand Island dressing and pickle relish; stir to combine. Spoon the sauce down the center of the top of the omelet. Garnish with onion, to finish.
