This easy to make pork tenderloin turns out juicy, tender, moist and delicious. Marinade it in the morning or overnight so that it's ready to cook at dinnertime. It will only take about 25 minutes to cook and in the meantime, make the sides to go with it.
2 T. freshly squeezed lemon juice
2 T. olive oil
1 t. minced garlic
1/2 t. dried parsley
1/2 t. salt
1/4 t. black pepper
1 1/2 - 2 lb. pork tenderloin
1 T. olive oil
In a small bowl, combine lemon juice, 2 T. olive oil, garlic, parsley, salt and pepper; whisk to combine.
Place pork tenderloin in a large zip lock bag; pour sauce over pork; close bag. Refrigerate for at least 2 hours, or overnight.
When ready to bake, preheat oven to 425 degrees.
Heat 1 T. olive oil in an oven-safe skillet over medium heat. Remove pork tenderloin from marinade. Sear pork in hot skillet on all sides.
Place skillet into the preheated oven. Bake until the internal temperature reaches 135 degrees, about 15 - 20 minutes. Remove from oven; let rest for 5 - 10 minutes.
Slice into medallions. Serve.
