Why go to a fancy, expensive restaurant when you can make these easy wraps at home? The chicken is tender with a wonderful sauce and it's topped with cashews and green onions. Serve as an appetizer or with rice as a meal.
1 T. salted butter
1 t. olive oil
2 lb. chicken breasts, cut into 1-inch pieces
2 t. minced garlic
3/4 c. chicken stock
1/4 c. low-sodium soy sauce
3 T. hoisin sauce
1 1/2 T. rice vinegar
2 T. cornstarch
salt and pepper, to taste
3/4 c. unsalted cashews
lettuce cups or butter lettuce
green onions for serving, optional
Heat butter and oil in a large skillet over medium heat. When butter has melted, add a single layer of chicken; season chicken with salt and pepper; cook for 3 minutes, or until brown; flip; cook an additional 3 minutes, or until golden brown. Turn heat to low; stir in the garlic; cook.
While chicken is cooking, whisk together chicken stock, soy and hoisin sauces, vinegar and cornstarch in a small bowl; stir into the skillet; cook with chicken over low heat until sauce has thickened. Stir in cashews.
Serve immediately in lettuce cups. Garnish with chopped green onions, if desired.
6 servings.
*It can also be served over rice, if preferred.
Tip: For lettuce cups: when buying a head of lettuce, carefully remove each leaf and then wash and dry them.
