These healthy and delicious wraps have an incredible blend of flavors and textures. They require little time and no cooking to prepare. Serve them as an appetizer or as a nice luncheon or dinner dish.
Dressing:
1/4 c. rice vinegar
2 T. freshly squeezed lime juice
2 T. reduced-fat mayonnaise
2 T. reduced-fat creamy peanut butter
1 T. brown sugar
1 T. reduced-sodium soy sauce
2 t. minced fresh ginger root
1 t. sesame oil
1 t. Thai chili sauce
1 garlic clove, chopped
3 T. canola oil
1/2 c. minced fresh cilantro
Chicken Salad:
2 c. cooked, cubed chicken breast (leftover or rotisserie are great options)
1 small sweet red pepper, diced
1/2 c. chopped green onions
1/2 c. shredded carrot
1/2 c. unsalted dry roasted peanuts, chopped, divided
6 Bibb or Boston lettuce leaves
Dressing:
In a blender, combine the first 10 ingredients; while processing, gradually add oil in a steady stream; stir in cilantro; set aside.
In a large bowl, combine chicken, sweet red pepper, green onions, carrot and 1/4 c. peanuts. Add dressing; toss to coat. Divide among lettuce leaves; sprinkle with remaining peanuts. Fold lettuce over filling.
Serve.
