One Pot Taco Spaghetti

Description

This combination of delicious Italian and Mexican ingredients will make everyone happy. It will make you happy because it's easy to throw together, can be made in about 30 minutes and it's made in just one pan.

Ingredients

1 T. olive oil
1 lb. ground beef (ground chicken, turkey or pork can be substituted or combination)
1.25 oz. package taco seasoning
10 oz. can Ro*Tel® Mild Diced Tomatoes and Green Chilies
1 T. tomato paste
8 oz. spaghetti, uncooked
3 c. water
1/2 c. shredded Cheddar cheese
1/2 c. shredded Mozzarella cheese
1 Roma tomato, diced
2 T. chopped fresh cilantro leaves, optional

Heat olive oil in a large stockpot/Dutch oven over medium-high heat. Add ground beef; cook until browned, about 3-5 minutes, crumbling beef as it cooks; stir in taco seasoning. Drain and discard excess fat.

Stir in Ro*Tel tomatoes, tomato paste, spaghetti and 3 c. water; bring to a boil; cover; reduce heat; simmer until pasta is cooked through, about 13-16 minutes.
Remove from heat. Top with cheeses; cover until melted, about 2 minutes.

Serve immediately, garnished with diced Roma tomato and cilantro, if desired.

4 servings.

*Serve alone, with garlic toast or in taco shells.
