Description

This low-carb, keto friendly chicken can be on your table in less than 30 minutes. You'll love the spicy, juicy chicken with lots of gooey cheese. Serve with your favorite sides.

Ingredients

  • 4 medium chicken breasts or 2 large chicken breasts, cut lengthwise
  • 2 t. olive oil
  • 1 t. paprika
  • 1 t. Italian seasoning
  • 1/2 t. garlic powder
  • 1/2 t. salt
  • 1/2 t. black pepper
  • 1 c. pickled pepper rings
  • 1/2 c. shredded mozzarella cheese
  • 1/2 c. shredded pepper jack cheese
  • freshly chopped parsley, for garnish

Steps

  1. Preheat oven to 400 degrees. Lightly grease a 9×13 baking dish with oil or cooking spray.
  2. Arrange the chicken breasts in the baking dish; drizzle with olive oil; season both sides with salt, paprika, pepper, garlic powder, oregano and Italian seasoning.
  3. Evenly place marinated/pickled pepper rings over each chicken breast; sprinkle generously with mozzarella and pepper jack cheeses.
