This low-carb, keto friendly chicken can be on your table in less than 30 minutes. You'll love the spicy, juicy chicken with lots of gooey cheese. Serve with your favorite sides.
Ingredients
- 4 medium chicken breasts or 2 large chicken breasts, cut lengthwise
- 2 t. olive oil
- 1 t. paprika
- 1 t. Italian seasoning
- 1/2 t. garlic powder
- 1/2 t. salt
- 1/2 t. black pepper
- 1 c. pickled pepper rings
- 1/2 c. shredded mozzarella cheese
- 1/2 c. shredded pepper jack cheese
- freshly chopped parsley, for garnish
Steps
- Preheat oven to 400 degrees. Lightly grease a 9×13 baking dish with oil or cooking spray.
- Arrange the chicken breasts in the baking dish; drizzle with olive oil; season both sides with salt, paprika, pepper, garlic powder, oregano and Italian seasoning.
- Evenly place marinated/pickled pepper rings over each chicken breast; sprinkle generously with mozzarella and pepper jack cheeses.
