Ingredients

4 medium chicken breasts or 2 large chicken breasts, cut lengthwise
2 t. olive oil
1 t. paprika
1 t. Italian seasoning
1/2 t. garlic powder
1/2 t. salt
1/2 t. black pepper
1 c. pickled pepper rings
1/2 c. shredded mozzarella cheese
1/2 c. shredded pepper jack cheese
freshly chopped parsley, for garnish

Preheat oven to 400 degrees. Lightly grease a 9×13 baking dish with oil or cooking spray.

Arrange the chicken breasts in the baking dish; drizzle with olive oil; season both sides with salt, paprika, pepper, garlic powder, oregano and Italian seasoning.

Evenly place marinated/pickled pepper rings over each chicken breast; sprinkle generously with mozzarella and pepper jack cheeses.

Bake for 18 - 20 minutes, or until chicken’s internal temperature reaches 165 degrees and cheese is bubbly and golden.

Garnish with freshly chopped parsley. Serve immediately.

4 servings.

*Serve it with cauliflower rice for a low-carb/keto diet or with zucchini noodles, rice or pasta if not on a low-carb/keto diet.
