Italian Sausage and Peppers

Description

This delicious meal is super easy and quick to make for weeknight meals. It's full of wonderful flavors with chunks of Italian sausage, bell peppers, onion, herbs and garlic. Serve over egg noodles, rice or on rolls.

Ingredients

2 T. olive oil
1 package mild Italian sausage
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
salt, to taste
2 sweet onions, thinly sliced
2 cloves garlic, minced
1 T. tomato paste
14.5 oz. can diced tomatoes
1/2 t. salt
1/2 t. dried oregano
1/2 t. dried basil
1/4 t. black pepper
1/4 t. red pepper flakes

Add oil to a large skillet; heat over medium-high heat. Add sausages; cook until browned on all sides; remove sausage from skillet; set aside. Sausage will not be cooked through at this point.

Add onion and peppers to grease left in skillet; add a pinch or 2 or salt and herbs and spices; cook over medium heat until softened; add garlic; cook for 1 minute.

Slice sausage into 1 to 1 1/2 inch pieces. Return sausage to skillet. Cook 5 - 10 minutes or until sausage is cooked through and sauce is thickened.

Serve as is, over egg noodles or rice, or on hoagie rolls, if desired.
