2 lb. skin-on, bone-in chicken thighs
4 T. unsalted butter, melted
1 T. Cajun Seasoning
1 T. honey
1 t. salt
3 dashes cayenne pepper
Debone the chicken thighs, leaving the skin on.
In a large bowl, add melted butter, Cajun Seasoning, honey, salt and cayenne pepper together; stir to mix well. Place the chicken in the Cajun butter; marinate for 30 minutes.
Preheat oven to 400 degrees.
Transfer chicken to a baking dish; bake 20-25 minutes or until chicken is cooked through and skin starts to brown. Broil the skin for 10 seconds or so, until nicely charred.
Transfer the chicken and the sauce to a serving platter. Slice the chicken into pieces. Spoon the sauce over the chicken. Serve immediately.
