Description

Here is a great option for lunch , dinner. or even breakfast. It has all of the wonderful flavors of a cheeseburger without the bun. Serve it hot with ketchup, if desired.

Ingredients

1 lb. lean ground beef
1 T. olive oil
1 medium white onion, chopped
8 large eggs
1/4 c. heavy cream
1/4 t. garlic powder
salt and pepper
6 oz. cheddar cheese, grated, divided
ketchup, for serving

Preheat oven to 350 degrees.

In a 12-inch oven-safe, cast-iron skillet, add a drizzle of olive oil over medium heat; ground beef. Cook beef, breaking it up as it cooks, until browned; add onions; cook for a few minutes until onions are soft; discard excess grease; season with garlic powder and a pinch of salt and pepper.

Meanwhile, whisk together the eggs and cream.

Sprinkle beef mixture with about 1/2 c. grated cheese. Pour the egg and cream mixture over beef and onions, spreading out eggs evenly in the dish. Place the dish to the oven. Bake for 20 minutes. Remove frittata from the oven; top with the remaining grated cheese; bake another 5 minutes.

Serve hot with ketchup, if desired.
