Mushroom Ravioli with Mushroom Sauce

Description

No time to cook but want a meal that will impress? Serve this restaurant quality meatless meal and it will be a hit. Serve it with a side salad and garlic bread, if desired.

Ingredients

  • 10 oz. packaged mushroom or cheese filled ravioli
  • 2 T. olive oil
  • 2 oz. shiitake mushrooms, sliced
  • 4 oz. white mushrooms, sliced
  • 1 clove garlic, finely chopped
  • 1/4 c. brandy
  • 1 c. heavy cream
  • 1/2 t. nutmeg
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 c. grated Parmesan cheese, divided

Steps

  1. Cook ravioli according to package directions.
  2. Heat olive oil in a skillet; cook mushrooms until tender; stir in garlic; add brandy; cook for 2 minutes. Stir in heavy cream; bring to a simmer. Season with nutmeg, salt and pepper. When cream has thickened, stir in 1/4 cup of cheese. Stir in cooked ravioli; gently simmer for 1-2 minutes.
  3. Serve ravioli with sauce, grated Parmesan cheese and freshly ground black pepper.
