Mushroom Ravioli with Mushroom Sauce

Description

No time to cook but want a meal that will impress? Serve this restaurant quality meatless meal and it will be a hit. Serve it with a side salad and garlic bread, if desired.

Ingredients

10 oz. packaged mushroom or cheese filled ravioli
2 T. olive oil
2 oz. shiitake mushrooms, sliced
4 oz. white mushrooms, sliced
1 clove garlic, finely chopped
1/4 c. brandy
1 c. heavy cream
1/2 t. nutmeg
salt, to taste
freshly ground black pepper, to taste
1/2 c. grated Parmesan cheese, divided

Cook ravioli according to package directions.

Heat olive oil in a skillet; cook mushrooms until tender; stir in garlic; add brandy; cook for 2 minutes. Stir in heavy cream; bring to a simmer. Season with nutmeg, salt and pepper. When cream has thickened, stir in 1/4 cup of cheese. Stir in cooked ravioli; gently simmer for 1-2 minutes.

Serve ravioli with sauce, grated Parmesan cheese and freshly ground black pepper.
