No time to cook but want a meal that will impress? Serve this restaurant quality meatless meal and it will be a hit. Serve it with a side salad and garlic bread, if desired.
Ingredients
- 10 oz. packaged mushroom or cheese filled ravioli
- 2 T. olive oil
- 2 oz. shiitake mushrooms, sliced
- 4 oz. white mushrooms, sliced
- 1 clove garlic, finely chopped
- 1/4 c. brandy
- 1 c. heavy cream
- 1/2 t. nutmeg
- salt, to taste
- freshly ground black pepper, to taste
- 1/2 c. grated Parmesan cheese, divided
Steps
- Cook ravioli according to package directions.
- Heat olive oil in a skillet; cook mushrooms until tender; stir in garlic; add brandy; cook for 2 minutes. Stir in heavy cream; bring to a simmer. Season with nutmeg, salt and pepper. When cream has thickened, stir in 1/4 cup of cheese. Stir in cooked ravioli; gently simmer for 1-2 minutes.
- Serve ravioli with sauce, grated Parmesan cheese and freshly ground black pepper.
