Description
This tasty fish dish is simple to make and so good. Serve it with your favorite sides.
Ingredients
- 3/4 lb. mild-flavored fish fillets, about 1/2 inch thick (like cod, flounder, haddock, halibut, orange roughy or sole)
- 1 c. milk
- 1 c. (4 oz.) shredded Cheddar cheese
- 3/4 c. Original Bisquick™ or Bisquick Heart Smart® mix
- 1 t. freshly squeezed lemon juice
- 1/8 t. pepper
- salt, garlic and onion powders, to taste
- 2 eggs, beaten
- 1 small onion, chopped (1/4 c.)
- 9 oz. box frozen chopped spinach, thawed, squeezed to drain
- lemon wedges, if desired
Steps
- Preheat oven to 400 degrees. Spray 2 quart, 11x7 inch glass baking dish with cooking spray. Place fish in single layer in the dish.
- In a medium bowl, stir together remaining ingredients, except for the lemon wedges; evenly spread over fish to edge of dish.
- Bake uncovered about 30 minutes or until light brown.
