These delicious meatballs are just begging for you to make them. They can be made in the crock pot or the oven with a yummy homemade marinara sauce. They are keto friendly, gluten and grain free.
Ingredients
- Meatballs:
- 2 eggs
- 1/2 c. pork rinds, crushed
- 1/2 c. Parmesan cheese, grated
- 2 T. Italian seasoning
- 1/2 t. salt
- 1/2 t. pepper
- 1/2 t. garlic powder
- 2 1/2 lb. ground turkey
- 8 oz. Fontina or Mozzarella cheese, cut into 24 cubes
- Marinara Sauce:
- 28 oz. crushed tomatoes
- 2 t. minced garlic
- 1 T. extra virgin olive oil
- 2 t. dried basil
- 1 t. dried parsley
- 1 t. salt
- 1/2 t. pepper

- In a large bowl, whisk eggs, pork rinds, cheese and seasonings together. Add ground turkey; mix just until combined. Roll mixture into 24 meatballs.
