Crock Pot Cheese Stuffed Turkey Meatballs

Description

These delicious meatballs are just begging for you to make them. They can be made in the crock pot or the oven with a yummy homemade marinara sauce. They are keto friendly, gluten and grain free.

Ingredients

Meatballs:
2 eggs
1/2 c. pork rinds, crushed
1/2 c. Parmesan cheese, grated
2 T. Italian seasoning
1/2 t. salt
1/2 t. pepper
1/2 t. garlic powder
2 1/2 lb. ground turkey
8 oz. Fontina or Mozzarella cheese, cut into 24 cubes

Marinara Sauce:
28 oz. crushed tomatoes
2 t. minced garlic
1 T. extra virgin olive oil
2 t. dried basil
1 t. dried parsley
1 t. salt
1/2 t. pepper

Crock Pot:

Meatballs:
In a large bowl, whisk eggs, pork rinds, cheese and seasonings together. Add ground turkey; mix just until combined. Roll mixture into 24 meatballs.

Insert 1 cheese cube into the center of each meatball; set aside.

Marinara Sauce:
In a separate bowl, stir together marinara sauce ingredients.

Pour just enough sauce to cover the bottom of the crock pot. Place meatballs in the crock pot; cover with remaining sauce. Cover; cook on High 3 hours or Low 6 hours.

8 servings.

Oven:

Preheat oven to 375 degrees.

Follow the recipe from above up until putting the sauce in the crock pot. Instead, place half of the sauce into a 9 x 13 inch baking pan. Add all of the meatballs; cover with remaining sauce.

Bake 30 minutes or until turkey is no longer pink when a meatball is cut open.
