Whether you have very little time or all day to cook, you will love this chili. It can be made with the meat of your choosing or no meat at all and it will still be good. Serve it with your favorite toppings.
2 lb. meat of choice (ground beef, ground pork or ground turkey)
2 - 14 oz. cans rRanch Style pinto beans
1 - 14 oz. can black beans
1 - 14 oz. can white beans
1 - 14 oz. can tomato sauce
1 - 14 oz. can diced tomatoes
1 - 14 oz. can fire roasted tomatoes with green chile
1 - 7 oz. can chopped green chile
1 - 14 oz. can yellow corn
2 T. Mexican spice mix or taco seasoning
Toppings: shredded cheese, sour cream, chopped green onions, corn chips
Stove Top:
In a large pot, cook meat until no longer pink; discard any excess grease. Combine remaining ingredients; bring to a simmer over medium-low heat; cover; simmer, stirring occasionally for 2-10 hours. You can bring the chili to a boil, simmer 15 minutes and then serve it. But, if you could cook it longer, the flavors will be better if allowed to simmer together for a while.
Serve with the toppings of your choice.
8-10 servings.
Crockpot:
Cook meat in a skillet until no longer pink; discard any excess grease. Transfer to a large crockpot; add remaining ingredients. Cook on Low for 8-12 hours.
