Put a delicious dinner on the table in less than 30 minutes that is satisfying, comforting and delicious. Serve it with a salad and your favorite side dish for a complete meal.
10 slices thick cut bacon, cut into 1/2 inch slices
1 T. olive oil
1/2 onion, finely chopped
3 large cloves garlic minced
8 oz. penne pasta
2 c. chicken stock/broth
1/2 t. salt
1/4 t. black pepper
1/2 c. heavy cream
1 c. finely grated Parmesan cheese
1-2 t. cornstarch
1 T. water
1-2 T. fresh basil, finely chopped
In a large skillet, heat olive oil over medium heat; cook bacon until crisp; transfer to a paper towel lined plate to drain.
Remove all but 1-2 T. bacon grease from pan. Cook onion over medium heat until soft; stir in garlic; cook 30 seconds. Add in pasta, stock/broth salt and black pepper; stir well. Bring to a boil; cover; reduce heat to a simmer. Cook 13-15 minutes or until pasta is tender, stirring every 4-5 minutes.
In a small bowl, combine cornstarch with water; slowly stir into the skillet.
Remove from heat; stir in cream and all cheese until cheese has melted.
Garnish with chopped bacon and basil.
Serve.
