These Mexican inspired quesadillas are very simple and quick to prepare. Serve them as an appetizer, lunch or dinner with some of your favorite sides.
1 c. Old El Paso™refried beans
8 (7 or 8-inch) flour tortillas
1/2 c. Old El Paso™cheese 'n salsa dip
1/2 c. guacamole
1/2 c. salsa
Spread 1/4 c. refried beans on each of 4 tortillas. Place 1 tortilla in a medium skillet over medium heat; spread 2 T. dip over beans; top with another tortilla. Heat 5 minutes. With a spatula, turn quesadilla; heat another 1 - 2 minutes. Repeat with remaining tortillas and bean dip.
Cut each quesadilla into 8 wedges.
Serve with guacamole and salsa.
