This pasta dish would make a great meal for meatless Mondays or Fridays during Lent. It's ready in less than 30 minutes but the best part is how delicious it is. It's simple but elegant enough to serve to company.
22 oz. frozen cheese ravioli
2 half sticks (1/2 c.) Land O Lakes® butter with olive oil and sea salt
1 T. minced shallot
1 t. lemon zest
2 T. freshly squeezed lemon juice
2 T. chopped basil
salt and black pepper, to taste
1/3 c. shredded Parmesan cheese, for garnish
extra basil for garnish, if desired
Bring a large pot of well salted water to boil. Cook ravioli according to package instructions; drain; set aside, keeping it warm.
While ravioli is cooking, prepare the butter sauce:
In a small saucepan, melt butter over medium heat; add shallot; cook until tender, about 2 minutes. Stir in basil, lemon zest and juice; cook 2 minutes. Season with salt and pepper, to taste.
Pour ravioli in a serving bowl; pour sauce over ravioli; stir gently to combine.
Serve immediately, garnished with Parmesan cheese and extra basil, if desired.
