Let the slow cooker make a wonderful corned beef, then finish it in the broiler with a tangy, sweet caramelized glaze.
3-4 lb. corned beef brisket with seasoning packet
water, to cover
1/4 c. honey
1/4 c. grainy mustard
Rinse brisket; pat dry.
Place in a slow cooker; add seasoning packet; cover with water; cook on Low for at least 8 hours.
Just before ready to serve, heat broiler to high heat.
Remove brisket from slow cooker. Trim off and discard any fat on the exterior of brisket. Place brisket in a baking dish.
Mix honey and mustard together; pour directly over the top of brisket, coating evenly.
Broil for 5-7 minutes or until the glaze begins to brown and caramelize.
Slice and serve.
