Serve this tasty, easy and healthy main dish to your family. It's so elegant looking you can serve it to company.
1 1/4 lb. good quality salmon fillet
2 T. butter or margarine, melted, divided
1/4 t. salt
3/4 c. fresh white breadcrumbs from 1 bread slice*
1/4 c. grated Parmesan cheese
2 T. thinly sliced green onions
2 t. grated lemon zest
1/4 t. dried thyme leaves
Preheat oven to 375 degrees. Spray a shallow baking pan with cooking spray.
Pat salmon fillet dry with a paper towel. Place salmon, skin side down, in pan; brush with 1 T. butter. Season with salt.
Mix breadcrumbs, Parmesan cheese, onions, lemon zest and thyme in a small bowl. Stir in remaining 1 T. butter. Press breadcrumb mixture evenly on salmon.
Bake uncovered 15 - 25 minutes or until salmon flakes easily with a fork.
Serve immediately, right out of the oven.
4 servings.
*Bread with a medium texture instead of a soft texture works best for this recipe so that the topping gets crunchy.
