Ingredients
- 1 1/4 lb. good quality salmon fillet
- 2 T. butter or margarine, melted, divided
- 1/4 t. salt
- 3/4 c. fresh white breadcrumbs from 1 bread slice*
- 1/4 c. grated Parmesan cheese
- 2 T. thinly sliced green onions
- 2 t. grated lemon zest
- 1/4 t. dried thyme leaves
Steps
- Preheat oven to 375 degrees. Spray a shallow baking pan with cooking spray.
- Pat salmon fillet dry with a paper towel. Place salmon, skin side down, in pan; brush with 1 T. butter. Season with salt.
- Mix breadcrumbs, Parmesan cheese, onions, lemon zest and thyme in a small bowl. Stir in remaining 1 T. butter. Press breadcrumb mixture evenly on salmon.
