Frozen shredded hash browns give this salmon a wonderful, crispy crust while the Dijon mustard give it a great flavor. Serve with your favorite sides.
4 t. Dijon mustard
4 skinless salmon fillets
1 c. frozen shredded hash browns, not thawed
1 T. all purpose flour
1/4 t. salt
1/4 t. Pepper
olive oil
Spread 1 t. Dijon mustard on each salmon fillet.
In a medium bowl, combine frozen shredded hash browns, all purpose flour and 1/4 t. each salt and pepper.
Sprinkle hash brown mixture on top of the mustard on each fillet, pressing gently to help it adhere.
Heat olive oil in a non-stick skillet; cook fillet, potato-side down first, until golden brown and opaque throughout, about 3 minutes per side.
Serve immediately.
