This meal is simple to make and is packed with wonderful flavors. It's ready in about 30 minutes and clean up is a snap since it's a one pan dish.
8.8 oz. package Italian sausages or favorite sausage, cut into bite-size pieces
1/2 small onion, chopped finely
4 cloves garlic, minced
1/3 c. dry white wine (like a Sauvignon Blanc)
14 oz. can diced tomatoes, with juices
1 c. heavy/whipping cream
1 lb. uncooked potato gnocchi, in a box or fresh*
1/2 c. freshly grated Parmesan cheese
handful fresh basil, torn
salt and pepper, to taste
Sauté sausage and chopped onion in a skillet on on medium-high heat for 7-10 minutes, or until sausage and onions are lightly browned. Add garlic; sauté for 30 seconds, or until fragrant. Add wine; cook for about 1 minute. Stir in diced tomatoes with juices, cream and gnocchi. Once sauce starts to bubble, cover; reduce heat to medium; cook for 5 minutes.
Uncover; stir; let cook for a few minutes, or until gnocchi has cooked through and is nice and soft and sauce has thickened as desired. Stir in Parmesan cheese, salt and pepper, to taste. Garnish with basil.
Serve immediately.
4 servings.
*Don't pre-cook the gnocchi since it cooks right in the sauce. If using frozen gnocchi, it may need to cook longer, with the heat reduced a bit.
